If it's in a condition that requires a nut and bolt restauration, it's an option. If it doesn't need it, I'd always choose to keep the (original) state and fix only those things that need to be fixed. Major optical issues might be done, but I'd not try to remove all traces of the past 50 years.
I don't like vintage cars that look way "better" than they ever looked when they left the showroom. My biggest nightmares are always caused by "perfect" upholstery. Worn original leather(ette) looks much better in such cars than new leather that make the upholstery look like a mix between the interior of a boat and lounge furniture.

Thanks Tobi, much appreciated and fully agree on the upholstery comments,...seen some Dino's for sale with (for my taste) rather ridiculous looking leather seats :) :)
