What a great story and what a beauty of a car you have!
Smart burgundy colour combined with the beige soft-top! Super!

I myself have great memories of the 2000 Dino Coupé that my Dad had from the beginning of 1968 till 1970.
It must have been an early production car, as it was delivered without the Dinoplex ignition, but which was fitted several months after its delivery!
This beauty was in a non-metallic 490-68, burgundy skai seats with dark blue carpetry. (the carpets normally should have been dark grey, but i still don't get it how they were in dark blue!)
And as you quite rightly mention, the engine noise was out of this world! (One of my brothers once revved up to about 11.000 rpm on the rev counter. My God, that sound was as music in my ears!)
